  • 1–2 tsp freshly cracked black pepper
  • 2 Tbsp fish sauce
  • ½ cup shredded mozzarella (add more if you want it extra cheesy)
  • 3 stalks scallions/green onions, finely sliced (divided)
  • Salt, to taste (go easy—fish sauce + Cajun already add salt)
  • 1–2 baguettes, sliced on a bias ~½–¾" thick

Instructions
