Ingredients
This Shrimp & Imitation Crab Cajun Toast is crispy, creamy, and full of flavour — the kind of appetizer that feels fancy but comes together fast. The combo of shrimp, crab, and Club House Cajun Spice creates an umami-packed, golden bite that’s perfect for entertaining, potlucks, or when you want something a little extra with minimal effort.
Instructions
Step 1 — Make the shrimp paste
Smash the shrimp with a mallet or pulse in a food processor until it becomes a chunky paste (don’t over-blend — a little texture adds character).
Step 2 — Mix the filling
In a large bowl, combine shrimp paste, chopped imitation crab, mayo, Club House Cajun Spice, Club House Garlic Powder, black pepper, fish sauce, mozzarella, and 2 sliced scallions. Mix until evenly combined. Taste and adjust salt only if needed.
Step 3 — Prep the bread
Slice the baguette on a bias. Optionally, lightly oil one side for extra crispness.
Step 4 — Top the toasts
Spoon a generous layer of shrimp mixture onto each slice, spreading edge-to-edge so it bakes evenly and stays juicy.
Step 5 — Bake
Preheat oven to 400°F (200°C). Arrange slices on a parchment-lined sheet. Bake for 10–15 minutes until shrimp is opaque and tops are golden and bubbly.
Pro tip: For extra color, broil 1–2 minutes at the end — watch closely.
Step 6 — Finish & serve
Garnish with the remaining scallions. Serve hot and crispy.
Notes & Tips
-
Texture check: If the mixture seems too stiff, add 1 more Tbsp mayo. Too loose? Fold in a bit more mozzarella.
-
Salt awareness: Cajun spice + fish sauce bring plenty of salt — taste before adjusting.
-
Air fryer option: 370°F (188°C) for 6–9 minutes, working in batches as needed.
-
Food safety: Shrimp should be opaque and firm (internal temp ~145°F/63°C).
-
Make-ahead: Mix topping up to a day ahead; keep chilled. Spread and bake to order.
Why You’ll Love It
A crispy, savoury bite that tastes restaurant-worthy but takes less than 40 minutes to make. The shrimp and crab combo hits all the right textures — creamy, crunchy, and a little spicy — while the Cajun seasoning gives it a bold, addictive flavour that’s perfect for parties or cozy nights in.
