Instructions:

- Cook for about 25 minutes, or until the pork belly is tender but not falling apart.
- Rinse the pork belly under cold water, then slice it into thin pieces.
2. Prepare the Shrimp
- Boil the shrimp in a pot of water for 2-3 minutes until they turn pink and opaque.
- Remove the shrimp from the pot, let cool, and slice them in half lengthwise.
3. Make the Peanut Dipping Sauce
- Heat a small pan over medium heat with a splash of oil.
- Sauté the minced shallot and garlic until fragrant.
- Stir in hoisin sauce, peanut butter, and Sriracha. Add water gradually to achieve your desired consistency.
- Finish with a squeeze of lime juice for brightness. Set aside.
4. Assemble the Fresh Rolls
- Dip a sheet of rice paper into warm water and lay it flat on a clean surface.
- Layer lettuce, mint leaves, a slice of pork belly, and a couple of shrimp (orange side facing down for a beautiful presentation). Add chives for an elegant touch.
- Roll the rice paper tightly, tucking in the sides as you go. Repeat until all ingredients are used.
