Ingredients

2 lbs striploin or ribeye steak
8–10 cloves garlic, minced
2–3 shallots, minced
4–5 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp Red Boat fish sauce
2 tbsp sugar
1 tsp bouillon (chicken or beef)
Pinch of salt and freshly ground black pepper
2 white onions, thinly sliced into rings or half moons
1 ½ tbsp unsalted butter
Brioche hotdog buns or Italian rolls
1 green pepper, julienned
Provolone cheese (2–3 slices per sandwich)
Regular or Kewpie mayo, for topping

We’re putting a fun Vietnamese twist on the classic Philly Cheesesteak! Tender marinated steak inspired by the bold flavors of Bò Lúc Lác (Vietnamese shaking beef), caramelized onions, charred peppers, and melted provolone all come together in a toasty bun. Originally prepared for Red Boat, this fusion sandwich is bold, comforting, and crave-worthy.

Why You’ll Love It

Juicy, marinated steak with bold Viet flavors meets gooey cheese and toasted bread — the ultimate East-meets-West comfort sandwich.

Directions

Steak Marinade

Step 1. Place thinly sliced steak into a mixing bowl. Add minced garlic, shallots, soy sauce, oyster sauce, fish sauce, sugar, bouillon, salt, and pepper. Mix well.
Step 2. Let marinate for at least 30 minutes.

Onions

Step 1. Heat butter in a pan over low heat.
Step 2. Add sliced onions and sauté for 10–15 minutes until caramelized and golden brown. Set aside.

Sandwich Assembly

Step 1. In another pan, sauté green peppers until slightly charred. Set aside.
Step 2. Optional: Lightly toast the buns.
Step 3. Heat 1 tbsp oil or butter in a hot skillet. Add about ½ cup of marinated steak and stir-fry briefly.
Step 4. Gather the steak into a small pile in the pan, add caramelized onions, green peppers, and provolone cheese on top.
Step 5. Cover with a lid and allow the cheese to melt for 1–2 minutes.
Step 6. Transfer the mixture into the toasted buns.
Step 7. Top with mayo and serve immediately.

Taking the extra time to caramelize the onions is worth it — they bring out sweetness that balances the bold marinade.
