Instructions:
1. Prepare your aromatics & spices:
In a bowl, mix lemongrass, powdered spices, sugar and fish sauce. Toss tilapia pieces in mix and ensure evenly coated. Let sit for 5-10 minutes to let flavours absorb.
2. Airfryer or bake:
Line your basket or baking sheet with foil or parchment paper. Air fry at 400F for 8-10 minutes making sure not to dry out your fish. Sprinkle some salt while it is still hot
