Ingredients

Meatballs (Yields 18-20)

• 1 lb ground pork (or any ground meat)

• 1-2 tbsp fish sauce

• 3 green scallions, chopped

• 1 clove garlic, minced (or garlic powder)

• 1 shallot, finely chopped

• 1 tsp salt

• Generous amount of black pepper

• 1 tsp bouillon

• 1-2 tsp neutral oil

• 2-3 tsp sugar

Glaze

• 3 tbsp sugar

• 2 tsp rice vinegar

• 3-4 cloves garlic, minced

• 1-2 Thai chilies, chopped (optional)

• 1 tbsp fish sauce

• 3-4 tbsp oyster sauce

• 3-4 tbsp water

Steamed Bok Choy

• 1-2 bags bok choy

• 1 tsp oil

• 3 cloves garlic, minced

Garnish

• Toasted sesame seeds

• Chopped scallions

Instructions

Step 1: Prepare the Meatballs

In a large bowl, combine all the meatball ingredients. Mix well and form into 18-20 small meatballs.

Step 2: Cook the Meatballs

  • Skillet method: Cook the meatballs in a pan over medium heat, turning occasionally, until browned and cooked through.
  • Air fryer method: Air fry at 400°F for 10-15 minutes, shaking halfway through.

Step 3: Make the Glaze

In a separate pan, combine all the glaze ingredients and simmer over medium heat until slightly thickened. Add the cooked meatballs and toss until they are evenly coated in the glaze.

Step 4: Steam the Bok Choy

  1. Heat 1 tsp oil in a pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add bok choy and a splash of water, then cover and steam for 3-4 minutes until tender but still vibrant green.

Step 5: Assemble the Lunchbox

  1. Place the glazed meatballs at the base of your container.
  2. Add a layer of plastic wrap over the meatballs, then place the steamed bok choy on top. (This makes it easier to remove for reheating!)
  3. Keep toasted sesame seeds and chopped scallions separate until ready to eat for maximum freshness.

Step 6 (Optional): Add Heat!

Drizzle with sriracha for an extra spicy kick before serving.
