Even as a self-proclaimed meat lover, I honestly don’t miss the meat with this one. It’s that good!

Let’s talk about the flavours. We’ve got umami-packed mushrooms, crunchy toasted walnuts, and just the right seasonings to make this the most flavourful pâté dupe. Whether you spread it on baguette slices, dip your veggies in it, scoop it up with crackers, or (my fave) have it on your veggie Banh Mi, this pâté will definitely be your new go to spread.
This recipe is super easy to make too. No complicated ingredients, no chef-level skills required—just throw everything together and blend it up. You’ll have a delicious, meat-free spread ready in no time. I mean it when I say this will be a house hold staple real soon.
Instructions
1. Prep your veggies:
Mince the garlic and shallots, and roughly chop your cremini mushrooms.
2. Toast the Walnuts:
In a pan over medium heat, toast your walnuts until golden and fragrant, then roughly chop them. (I left mine whole since my food processor can handle it, but feel free to chop them if you prefer.)
3. Sauté Garlic and Shallots:
In a large pan, sauté the garlic and shallots until fragrant and soft.
4. Cook the Mushrooms:
Add the chopped mushrooms and sauté until they wilt down.
5. Add Seasonings:
Stir in the fish sauce, vegetable bouillon, and sugar. Mix everything together and take the pan off the heat to cool.
6. Soak the Walnuts:
Once it’s cooled down a bit, toss in the walnuts and let them soak up all the flavor.
7. Blend the Mixture:
Put the mushroom mixture, walnuts, and cashew butter (or almond butter) into a food processor. Blend until smooth and creamy.
8. Add the Final Touch:
Top with extra cracked pepper for that little extra kick. And there you have it—your perfect Meatless Mushroom Pâté!
A Quick Tip:
If you’re keeping it 100% plant-based, you can easily swap in vegan fish sauce. You’ll find it in the same aisle as the regular stuff, and it’s a great alternative for that savoury-umami punch!
