Vietnamese-Style Marinated Eggs: My take on the original Korean Mayak Eggs

Aren’t eggs just the best—The possibilities are endless! whether you’re a poached, scrambled, benny, or hard-boiled type of person, we all know eggs can be made exactly how we like them!
My latest obsession? These marinated soft-boiled eggs. They’re the perfect overnight prep for breakfast, lunch, a snack, or dare I say, even dinner! Serve them over rice, toss them in a salad, or enjoy them on their own, no matter how you eat them, these eggs are so simple yet egg-straordinary, you won’t be disappointed. Trust.
The OG inspo - Korean Mayak Eggs
If you’re already a fan of Korean Mayak Eggs (aka “drug eggs” because they’re so addictively good), then you’re going to love this version! Mayak Eggs are soft-boiled eggs marinated in a sweet, salty, and umami-rich blend that makes them irresistibly delicious.
My Vietnamese version kicks it up with a slightly different flavour profile, think a little sweeter, a bit more savoury—but with the same addictive effect (fair warning: If this is your first time making them, it definitely won’t be your last)
Step by step instructions:
1. Soft-boil the eggs: Bring a pot of water to a boil, gently lower in the eggs, and cook for 7 minutes. Transfer immediately to an ice bath and let them chill for at least 5 minutes before peeling.
2. Make the marinade: In a bowl, mix together soy sauce, honey, fish sauce, sesame oil, scallions, garlic, chilies, and water until combined.
3. Marinate the eggs: Place the peeled eggs in a container and pour the marinade over them, ensuring they are fully submerged.
4. Let them soak: Cover and refrigerate for at least 6 hours or overnight for maximum flavour.
5. Enjoy! Serve on toast, in rice bowls, or drizzled with the leftover marinade.🔥🥚✨
