Ingredients

  • 1/2 tablespoon onion powder
  • 1/2tablespoon garlic powder
  • 1/2 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 tablespoon chicken bouillon powder
  • 1 teaspoon sugar
  • Pinch of salt (or to taste)
  • 1/2 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1-2 lbs or 4-5 salmon filets
  • 3 tbsp of oil
  • 1 cup cane or palm sugar
  • 1/4 cup minced garlic
  • 2 shallots, minced
  • 3 tbsp of fish sauce
  • 3 tsp chicken or veg bouillon
  • 1 cup of water
  • 1 Thai bird chili, finely chopped (optional)
  • Serve with rice or grain of choice
  • Serve with sautéed green beans or veg of choice

To season & Crisp the Salmon:

  • 1/2 tablespoon onion powder
  • 1/2tablespoon garlic powder
  • 1/2 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 tablespoon chicken bouillon powder
  • 1 teaspoon sugar
  • Pinch of salt (or to taste)
  • 1/2 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1-2 lbs or 4-5 salmon filets

Caramelized Glaze (Kho)

  • 3 tbsp of oil
  • 1 cup cane or palm sugar
  • 1/4 cup minced garlic
  • 2 shallots, minced
  • 3 tbsp of fish sauce
  • 3 tsp chicken or veg bouillon
  • 1 cup of water
  • 1 Thai bird chili, finely chopped (optional)

Serve with

  • Jasmine Rice
  • Sautéed Green Beans w garlic
  • Sriracha or julienned ginger for an extra kick (optional)

How to make Vietnamese Caramelized Salmon

Step 1 Prepare the salmon:

Cut the salmon into 1-inch thick pieces. Toss in spice & starch blend.

Step 2 Air fry or bake:

In a single layer on an aluminum or parchment lined tray, air fry or bake until just cooked (so it won’t be dry when reheated) around 400F for 8-10 minutes.

Step 3 Make your glaze:

In a small sauce pan or non-stick frying pan, heat oil and sugar until sugar has melted into a syrup consistency on medium heat. Then add your garlic and shallots and fry for 1-2 minutes.

Season with fish sauce and bouillon and then add 1 cup of water to slow down cooking. Turn your heat down slightly to allow water to simmer and sauce to reduce until nice and sticky.

Add chopped chili at the end if you are looking for a spicy glaze.

Step 4 Glaze your salmon:

Once your salmon has finished baking, add to a bowl and toss with your glaze.

Step 5 Prepare your lunchboxes:

In a container, pack your salmon with white rice and sautéed green beans. Add thinly julienned ginger on top of your salmon and when you’re ready to heat, just microwave for 30s to 1 minute to enjoy warm!
