Sheet Pan Beef & Potatoes

Inspired by Thịt Bò Xao Khoai

If you’re craving something packed with flavour, easy to make, and impossible to resist, this Vietnamese Caramelized Beef & Roasted Veggies is calling your name. Picture thin, tender slices of beef soaking up a rich, umami-packed marinade, roasted alongside crispy-edged potatoes and perfectly charred broccoli. And the best part? Everything cooks on one sheet pan—because nobody has time for a sink full of dishes.

This recipe is a low effort, high reward meal. Toss everything together, let the oven do the work, and in no time, you’ve got a hearty, satisfying dish that tastes like you spent hours in the kitchen. The finishing touches—chopped green onions, cilantro, and crispy fried shallots—add a fresh, crunchy contrast that takes things to another level. Whether you’re meal-prepping or just need a no-fuss dinner, this one’s a game-changer - you ready?!

How to make Sheet Pan Vietnamese Caramelized Beef with Potatoes

1. Preheat & Prep:

Fire up that oven to 425°F (220°C) and line a large sheet pan with parchment paper or foil. No one’s got time for scrubbing pans later.

2. Marinate the Beef:

In a bowl, mix together the marinade ingredients—soy sauce, oyster sauce, fish sauce, cane sugar, garlic powder, onion powder, bouillon, and neutral oil. Toss the thinly sliced beef in the marinade, making sure it’s drenched in flavor. Cover and refrigerate while you work your magic on the veggies.

3. Prepare the Potatoes:

Slice those Yukon potatoes into 1/4” thick rounds and give them a quick drizzle of neutral oil. Lightly season with salt and lay them out in a single layer on the sheet pan. Roast them for 15 minutes to give them a head start—these little guys take the longest to cook, and we’re not about to leave them behind.

4. Add the Broccoli & Onions:

After the potatoes have had their moment, take the pan out and add the chopped broccoli and thinly sliced onions. Drizzle them with a little more oil and toss to coat. Slide them back into the oven for another 10 minutes, so everything gets a good roast.

5. Add the Marinated Beef:

Take the pan out and lay those marinated beef slices on top of the veggies and potatoes like you’re creating a masterpiece. Make sure they’re spread out evenly so they cook just right. Drizzle any leftover marinade over the veggies for that extra oomph.

6. Final Roast:

Toss the sheet pan back in the oven and let it roast for 8-10 minutes, or until the beef is cooked through and slightly caramelized. Keep an eye on it—overcooked beef is a tragedy. If you’re feeling extra, turn on the broiler for the last 2 minutes to get those edges crispy.

7. Prepare Your Lunchboxes:

Take the pan out and let everything rest for about 5 minutes. Now, pack your beef, potatoes, and broccoli—either mixed or separated, depending on your style. Top it off with chopped green onions, cilantro, and crispy fried shallots for that chef’s kiss finish.

Pro Tips

  • Timing Hacks: Start with the potatoes, they need more time to cook. Then layer in the faster-cooking ingredients. This way, everything finishes perfectly at the same time. You're welcome.

  • Thin Beef Slices: Thin beef slices cook faster and stay tender. Aim for pieces about 1/8” thick. Trust me, it’s worth it.

  • Even Cooking: Don’t overcrowd the pan—no one likes a crowded kitchen. If needed, use two pans to keep everything in a single layer and cook evenly.
